The Kolkata style biryani is made with mildly flavoured rice, meat, eggs and potatoes. This sub-variant of the Lucknowi style Biryani, is a bit sweeter like everything else Bengali. The fragrant smell of the ghee and spices is enough to make you go weak on the knees. This variety of Biryani is easier on the spices and primarily includes nutmeg. The mutton is marinated in a yogurt based marinade and cooked separately from the rice. The rice is flavoured with Keoda water & Rose water mixed with saffron to enhance the taste and colour. The Kolkata Mutton Biryani is best enjoyed with Chicken Chaap or Chanp.
