Aval Payasam Recipe For Onam

Onam is around the corner and now is as good a time as any for you to learn how to make payasam to serve everyone that comes home. One of the 26 dishes that are served during an Onam sadhya, the payasam is one of the most important dishes that you could ever eat. Very often, there are more than one type of payasam served during lunch, but instead of making all three, we decided to make just one. Usually made with rice or semiya (vermicelli), this payasam is made using milk and ghee. But we’ve decided to use aval (poha) for this recipe, but you can use whatever you decide and it will still work.

Instructions
Method
  1. Put the coconut, cashews and poppy seeds into the mixer and grind to a paste
  2. In a pan, heat 1 teaspoon of ghee and add the cashew till golden and set aside
  3. Rinse the poha and in the same pan, roast the poha till the colour changes, keep aside.
  4. Boil milk and then simmer till it reduces in volume to at least 1/2 cups.
  5. Add sugar and mix well, then add the cardamom for flavour.
  6. Add the paste to the milk and mix really well till the raw smell leaves
  7. Now add in the roasted poha and give it a quick stir, then let it simmer for a bit.
  8. Once the poha is soft and mixed well with the milk, turn the stove off.
  9. Serve the payasam and garnish with the roasted cashews.
