A mainstay in Chinese culture for thousands of years has been the Peking duck, with its rich, dark meat and crispy skin, served and eaten during this festive time. From duck puffs to refreshing salads, pair your meal with champagne to truly celebrate this occasion with your friends and family. Duck and champagne – is surely one of the most extravagant combinations one can think of! And yes, there is a deliciously decadent element in this pairing, but it’s not just about finding two greatly loved and superbly luxurious treats and serving them together. It is also, actually, a completely inspired match put together by the culinary team at Hakkasan.
The menu includes meal experiences to enjoy significant flavours including Peony –an assortment of dishes like the Roasted duck and cucumber puff filled with tender peppery duck meat and freshness of cucumber topped with black and white sesame seeds, giving the dim sum a nutty flavour and added crunch, Roasted Truffle Duck, made with roast breast pieces of duck, Black truffle paste, Shallot, Yellow bean, Veg stock and truffle oil. The Shou with its assortment of dishes including Crispy Duck Salad and Half Peking Duck will give you a taste of the classic imperial dishes. The Roasted mango duck with lemon sauce of the Dragon meal experience is prepared over a long time, the crispy skinned-roasted duck is complemented by the tangy pieces of mango, and the pairing is served on zesty lemon sauce.
Traditionally served to royalty years ago, the Peking duck from the Qilin experience is now a signature at Hakkasan in India and around the world, this dish is prepared using a meticulous process of partially deboning, air drying, blanching and finally roasting to perfection. The Peking duck at Hakkasan is served at the table where the Chef will carve it in front of you into smaller pieces. After carving the duck, Hoisin sauce is spread on a pancake, added with green onions and a few strips of duck and folded into a wrap. The final result is a rush of tastes and flavours to complete your festive meal.
Every meal experience will be paired with a glass of GH Mumm champagne or the all-new umami-flavoured Peking duck cocktail made by fat washing, a mixology technique that is now gaining popularity.
