You must be thinking what is brown butter? Brown butter made its origin in France. The French call it “beurre noisette” which actually means hazel butter. The butter, when melted, transforms into butter fat and milk solids are formed. The milk solids being heavier tend to sink to the bottom of the pan when brown butter is made. This gives its distinct burnt flavour. The butter burns and takes on a different dimension in flavour. It makes it rich and flavourful with almost a rounded nutty flavour. Brown butter can be used in many savoury dishes and also in sweet French pastries and desserts. Now-a-days, brown butter has replaced the normal butter in dessert making.
How to make brown butter?
The only ingredient you’ll need is butter. Unsalted butter works best because the dish can be seasoned accordingly if you use unsalted butter. First, cut the butter into cubes. Cutting the butter into smaller even pieces serves two purposes. It melts faster and, more importantly, it melts more evenly. Now, add the butter cubes to a large pot. Melt the butter on medium heat. Keep a close eye on it so that it doesn’t blacken. Continue cooking and continuously stirring until the butter browns. At this point, you’ll see the milk solids separate and the butter becomes murkier. The bits start to brown and sink to the bottom. At this point, switch off the flame and let it cool. This is brown butter and can be used in almost any dish!
