Buttermilk Fried Chicken Recipe

Spending time at KFC hogging on the crispy chicken is one of our favourite hobbies. The perfectly fried chicken checks off all the right items on our list of how chicken dishes should be prepared. Although it tastes heavenly, eating out at KFC every day doesn’t really suit the health quotient.

So, we decided to replicate the KFC chicken in our kitchen with some added ingredients to kick it up a notch. This buttermilk marinated chicken is crunchy on the outside and soft and juicy on the inside. The best of both worlds.

Instructions
For marinade
  1. Whisk the buttermilk, mustard, salt and pepper in a medium bowl
  2. Pour this buttermilk mixture over the chicken
  3. Cover and refrigerate for at least 6 hours
For Frying
  1. Combine flour, baking powder, salt and pepper in a bowl.
  2. Take the chicken pieces out of the marinade and coat each piece with the flour
  3. Rest the chicken pieces in the flour, turning occasionally
  4. Pour oil into a large pan and heat on medium high
  5. Add 4 pieces of chicken to the pan and reduce the heat to medium low
  6. Fry the chicken pieces until browned
  7. Remove from heat and serve
